Afghanistan is one the main top exporter of dried figs in the world. Afghanistan figs produced with unique taste, flavor and colors. Afghanistan climate and environment has many advantages for growing high quality figs trees. There are two main type of figs trees growing in the country, mountain figs and orchard figs. Also, there are two color based type of figs light-yellowish figs and light black figs. After harvesting and handpicking figs from orchard, the figs cleaned ripened and high quality figs flattened under sun light for 2-3 days. In addition, before complete drying and cutting stalk (peduncle), a hole created in the middle of figs to tight it on a bamboo string and putting under the sunlight for completing the drying process.

Light yellowish figs

There are two types of light yellowish, white and dark-yellowish figs. During the drying process, if the preservation solution used the color getting white, while the drying process occurred without preservation solution the color of figs getting dark-yellowish.

Black or navy blue figs

Based on tree there is no any major difference between black and light-yellowish figs appearance. But the amount of anti-oxidant and anti-cancer ingredient in black raising more dominant.
